I\u2019m currently on my second pass edit of <a href=\"https:\/\/bdabooks.com.au\/Breaking-the-Broadcast.html\">that project<\/a>, so it\u2019s time for a recipe for another iconic Aussie classic!<\/p>\r\n<p>Lamingtons are a beloved Australian cake, perfect for afternoon tea, fundraisers, or just as a sweet treat with your cuppa. These sponge cake squares are dipped in chocolate icing and rolled in desiccated coconut, creating a delicious, nostalgic snack that\u2019s sure to please everyone.<\/p>\r\n<h2>The Recipe<\/h2>\r\n<h3>Ingredients<\/h3>\r\n<h4>For the sponge:<\/h4>\r\n<ul>\r\n<li>125g (\u00bd cup, or 1 stick) unsalted butter, softened<\/li>\r\n<li>150g (\u2154 cup) caster sugar<\/li>\r\n<li>1 tsp vanilla extract<\/li>\r\n<li>2 large eggs (average weight of a large egg: 57g \/ 2 ounces)<\/li>\r\n<li>180g (1\u00bc cups) self-raising flour, sifted (if you don\u2019t have self-raising flour, use 180g of plain \/ all-purpose flour and 10g \/ 2tsp baking powder)<\/li>\r\n<li>120ml (\u00bd cup) milk<\/li>\r\n<\/ul>\r\n<figure id=\"attachment_3011\" aria-describedby=\"caption-attachment-3011\" style=\"width: 736px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3011 size-full\" src=\"https:\/\/bdabooks.com.au\/Blog\/wp-content\/uploads\/2025\/11\/Baking-stages-of-lamingtons.png\" alt=\"Stages of baking lamingtons: mixing the batter, baked cake, covering the cake in chocolate icing\" width=\"736\" height=\"401\" \/><figcaption id=\"caption-attachment-3011\" class=\"wp-caption-text\">Stages of baking lamingtons: mixing the batter, baked cake, covering the cake in chocolate icing<\/figcaption><\/figure>\r\n<h4>For the icing:<\/h4>\r\n<ul>\r\n<li>250g (2 cups) icing sugar, sifted<\/li>\r\n<li>25g (\u00bc cup) cocoa powder, sifted<\/li>\r\n<li>60ml (\u00bc cup) milk<\/li>\r\n<li>30g (1.5 Aus tbsp \/ 2 tbsp \/ \u215b cup \/ \u00bc stick) unsalted butter, melted<\/li>\r\n<\/ul>\r\n<h4>To finish:<\/h4>\r\n<ul>\r\n<li>180g (2 cups) desiccated coconut<\/li>\r\n<\/ul>\r\n<h3>Guide<\/h3>\r\n<h4>The Sponge:<\/h4>\r\n<ul>\r\n<li>Preheat oven to 180\u00b0C \/350\u00b0F (160\u00b0C \/ 320\u00b0F fan-forced).<\/li>\r\n<li>Grease and line a 20cm x 20cm square cake tin.<\/li>\r\n<li>Beat butter, sugar, and vanilla together until light and fluffy.<\/li>\r\n<li>Add eggs one at a time, beating well after each addition.<\/li>\r\n<li>Fold in half the flour, then half the milk. Repeat with remaining flour and milk until just combined.<\/li>\r\n<li>Spoon batter into prepared tin and smooth the top.<\/li>\r\n<li>Bake for 25\u201330 minutes, or until a skewer comes out clean. Cool in tin for 10 minutes, then turn out onto a wire rack to cool completely.<\/li>\r\n<li>Once cool, trim edges if needed and cut sponge into 16 even squares.<\/li>\r\n<li>Place cake squares in the fridge for at least one hour, but preferably overnight. This helps with dipping the cake in the icing.<\/li>\r\n<\/ul>\r\n<h4>The Chocolate Icing:<\/h4>\r\n<ul>\r\n<li>Combine the icing sugar and cocoa in a large bowl.<\/li>\r\n<li>Add the melted butter and milk. Mix until smooth and glossy.<\/li>\r\n<\/ul>\r\n<figure id=\"attachment_3012\" aria-describedby=\"caption-attachment-3012\" style=\"width: 736px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-3012 size-full\" src=\"https:\/\/bdabooks.com.au\/Blog\/wp-content\/uploads\/2025\/11\/Lamingtions-with-cream-and-berries.png\" alt=\"Lamingtons with berries and cream  \" width=\"736\" height=\"401\" \/><figcaption id=\"caption-attachment-3012\" class=\"wp-caption-text\">Lamingtons with berries and cream<\/figcaption><\/figure>\r\n<h4>Icing the Lamingtons:<\/h4>\r\n<ul>\r\n<li>Place the coconut in a shallow dish.<\/li>\r\n<li>Using two forks, dip each cake square into the chocolate icing, turning to coat all sides.<\/li>\r\n<li>Allow excess icing to drip off, then roll the cake in coconut until fully coated.<\/li>\r\n<li>Place finished lamingtons on a wire rack to set.<\/li>\r\n<li>Serve and enjoy!<\/li>\r\n<\/ul>\r\n<p>If you\u2019re short on time, use a store-bought sponge. Lamingtons keep for up to 3 days in an airtight container.<\/p>\r\n<p>Lamingtons are best enjoyed fresh, ideally with a nice cuppa or as a sweet bite at your next gathering.<\/p>\r\n<h2>Variations<\/h2>\r\n<ul>\r\n<li>For a classic twist, sandwich two lamington halves with raspberry jam and whipped cream before icing.<\/li>\r\n<li>Try chocolate mousse as a filling between two lamington halves before icing.<\/li>\r\n<li>Try a lemon cake or a spiced cake infused with cinnamon and nutmeg instead of a plain vanilla cake.<\/li>\r\n<li>White chocolate ganache could be used instead of the classic chocolate icing for a variation.<\/li>\r\n<li>Lamingtons could be rolled in finely chopped nuts instead of desiccated coconut.<\/li>\r\n<li>Serve the original version with berries and cream.<\/li>\r\n<\/ul>\r\n<figure id=\"attachment_3013\" aria-describedby=\"caption-attachment-3013\" style=\"width: 736px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-3013\" src=\"https:\/\/bdabooks.com.au\/Blog\/wp-content\/uploads\/2025\/11\/Lamington-variations.png\" alt=\"Lamington variations\" width=\"736\" height=\"401\" \/><figcaption id=\"caption-attachment-3013\" class=\"wp-caption-text\">Lamington variations<\/figcaption><\/figure>\r\n<h2>About Lamingtons for My Non-Aussie Friends<\/h2>\r\n<p>There\u2019s some debate about how lamingtons came about. Apparently, they originated in Brisbane, Queensland (my hometown!), in the late 19th (or early 20th) century. They were named after Lord Lamington.<\/p>\r\n<p>The <a href=\"https:\/\/www.slq.qld.gov.au\/blog\/who-invented-lamington-answers-may-surprise-you\">State Library of Queensland<\/a> discusses the theories behind who, and where, lamingtons were created. The <a href=\"https:\/\/www.ogh.qut.edu.au\/history\/house-bites\/house-bites2\/battle-of-the-lamington\">Queensland University of Technology<\/a> says that lamingtons were created in the kitchen at Government House (the Governor\u2019s Residence) while Charles Wallace Alexander Napier Cochrane-Baillie (the <a href=\"https:\/\/adb.anu.edu.au\/biography\/lamington-second-baron-7018\">Second Baron Lamington<\/a>) served as the second Governor of Queensland (from 9 April 1896 to 19 December 1901).<\/p>\r\n<p>The first lamington recipe, <a href=\"https:\/\/trove.nla.gov.au\/newspaper\/article\/101452826\">as it\u2019s been preserved by the National Library of Australia<\/a>, appears to have been published in <em>Queensland Country Life<\/em> on 17 December 1900.<\/p>\r\n<h2>Final Thoughts<\/h2>\r\n<p>These are not your average cakes.
