Now it\u2019s time for a preserve! Also know as tomato jam!<\/p>\r\n<p>While my Nonna taught me how to cook Italian and my Nanna taught me how to cook Australian, I learnt how to make jam myself (by trial and error at some points).<\/p>\r\n<p>I\u2019m going to share how I made my tomato jam! So, get ready to preserve like an Aussie and add some jammy magic to your next ham sandwich! \u00a0<\/p>\r\n<h2>The Recipe<\/h2>\r\n<p>I had some tomatoes and spring onions in the fridge that were\u2026 making their way out the door, and I didn\u2019t want to lose them.<\/p>\r\n<p>So, I had to do SOMETHING with them. I didn\u2019t have the right things for chutney\u2026 so jam it was!<\/p>\r\n<h2 style=\"text-align: center;\">Jam in Stages<\/h2>\r\n<div id='gallery-1' class='gallery galleryid-3088 onions, sliced<\/li>\r\n<li>3 cloves garlic, minced<\/li>\r\n<li>2 teaspoons minced ginger<\/li>\r\n<li>10 \u2013 12 sage leaves, chopped<\/li>\r\n<li>2 \u2013 3 sticks rosemary (leaves pulled from stalks), chopped<\/li>\r\n<li>Olive oil<\/li>\r\n<li>1 kilogram tomatoes, chopped<\/li>\r\n<li>\u00be cup sugar<\/li>\r\n<li>2 (Australian) tablespoons apple cider vinegar<\/li>\r\n<li>Salt<\/li>\r\n<li>Pepper<\/li>\r\n<\/ul>\r\n<h3>Method<\/h3>\r\n<ol>\r\n<li>Fry spring onions, garlic, ginger, sage, and rosemary in olive oil on a medium-low heat until the onions are translucent.<\/li>\r\n<li>While the onion mix is low frying, chop the tomatoes (with the skin on) into rough cubes.<\/li>\r\n<li>Add them to the onion mix, season with salt and pepper, and heat until liquid appears.<\/li>\r\n<li>Add sugar and apple cider vinegar, stir through, and bring to a boil. Reduce the heat to a simmering level.<\/li>\r\n<li>Simmer until the mixture reduces to jam consistency. (My mixture took 2.5 hours.)<\/li>\r\n<li>While simmering, stir the mixture and scrape down the sides of the pot so it doesn&#8217;t crystalise and burn.<\/li>\r\n<li>Bottle while hot.<\/li>\r\n<\/ol>\r\n<h2>What It\u2019s Good For!<\/h2>\r\n<p>I left the skin on the tomatoes when I chopped them, rather than peeling them. The skin has pectin in it, which helped set the jam.<\/p>\r\n<p>I tried on some of my Christmas leftovers (porchetta, stuffing on the side meatballs, and roast potatoes and carrots) and a ham and cheese sandwich today. DELICIOUS!<\/p>\r\n<p>You could also have it on toast, with a drizzle of olive oil, for breakfast. And you could add fried eggs on top, or try it with an omlette.<\/p>\r\n<h2>Final thoughts<\/h2>\r\n<p>I hope you like my version of tomato jam and find inspiration to embrace preserving!
